Catalogue migration is a data project as well as a design project. Identify the fields needed by the new store and map them to the current records. Product IDs, variants, images, categories and stock information should remain connected throughout the transfer.
A practical approach
Test with a representative sample before importing everything. Include complicated products and incomplete records, not only the easiest examples. Record transformations so that the final import can be repeated predictably rather than depending on manual corrections that nobody documents.

A colour field stored as free text may contain several names for the same finish. Normalising those values before import can prevent duplicate filters and inconsistent product options in the new catalogue.
